Shrimp Po Boy (with Pulled Chicken)-Fat Tuesday For The Fat Foodie

I REMEMBERED THIS YEAR! Last year, I put together this awesome sammie… but was late with my post for Fat Tuesday. Not this year! Plus, to make it even better, I am adding a drink special for this bad boy…I mean, Po Boy! With all of that being said, it is SO hard to choose from all the different food of not only Mardi Gras, but New Orleans in general! There’s Jambalaya, Beignets, Etouffee, and the always traditional, Paczki. This year, I wanted to keep things handheld. Get ready for The Tailgate Foodie’s Shrimp Po Boy!

The Po Boy

The OG sammie was called the “poor boy”, but you know how that New Orleans/Cajun accent goes. Now, we have the Po Boy. By definition, the sammie is usually loaded with meat (generally Roast Beef), or any form of fried Seafood (Oysters and Shrimp being the primo choice). Well, you all know me well enough by now… I like to mix things up. It says meat. I used meat. It says seafood. I used seafood. Therefore, we have a Po Boy! And it is “dressed up”! Generally, that means Lettuce, Tomatoes, and Pickles. Why not a Remoulade Cole Slaw instead of Lettuce? See, these are the questions that go on in my head!

TTGF Shrimp Po Boy (with Pulled Chicken!)

Like I said, I used meat and I used seafood! Obviously, I love pulled Chicken. I’ve used it for a few things on this page (Check out this Smoked Pulled Chicken!). Throw on some seared Shrimp with our 5 Pepper Blend for some kick, and you have a pretty kickass sandwich. NOW, make some slaw with a homemade (or purchased, I guess…) Remoulade! Now that… THAT sammie is the best! It’s Fat Tuesday cuisine at its finest!

The Stack

  • French Roll: It’s gotta be French and it has to be a roll.
  • Remoulade Slaw: Classic Remoulade Sauce made into a KILLER slaw.
  • Tomatoes: Nice punch of freshness that is needed!
  • Pulled Chicken: The perfect amount of flavor and fat (obviously seasoned with TTGF Chicken Rub!).
  • Spicy Shrimp: Perfectly seasoned Shrimpies take this sandwich over the edge! 5 PEPPER BLEND 4 LYFE!
  • Sriracha: The best hot sauce for this Sammie!

Why Not Make This Meal Even More Mardi Gras Like?!

Welcome to the Hurricane! I don’t really care if the Hurricane is just about getting absolutely shit housed on Bourbon Street! Maybe this drink is only for tourists, but to hell with it! It is the exact sweet, fruity bullshit I want on this day of frozen terribleness. Now, this is the TTGF take on it…I don’t have the classic, bulbous glass. I don’t have beads cuz I didn’t want to flash the goods. And lastly, it’s 4PM on a Monday (while writing this), so I am not shit housed…yet.

  • 2 oz. White Rum
  • 2oz. Dark Rum
  • 2 oz. Passion Fruit Juice
  • 2 oz. Orange/Mango Juice
  • 1/2 oz. Grenadine
  • 1 tsp. Brown Sugar
  • 1 oz. Lime Juice
  • Garnish with Orange slice, Maraschino Cherry

    Pour all ingredients in shaker. Shake what yo mama gave ya. Pour in glass. Garnish. Chug. Repeat.
