Tailgate Smash Burgers

The How To:

Ingredients

For the Smash Burger

  • 1 lb. Ground Beef (80/20)
  • 1 tbsp. Backyard Burger Blend
  • 6 Sharp Cheese (shredded or thin slices)
  • 3 tbsp. Unsalted Butter
  • Lowcountry Gold

For Caramelized Onions (optional)

  • 1 Sweet Onion (medium, julienned)
  • 4 tbsp. Unsalted Butter
  • 1/2 tsp. Backyard Burger Blend

Instructions

  1. Turn flattop (or skillet!) to high heat. Place 1/2 tbsp. Butter in skillet. Allow to melt.
  2. While heating, form Burger into 1/4 pound balls. Once skillet is to temp, place ball into skillet.
  3. SMASH!
  4. Let sear for another 3 minutes. While searing, season top of Burger Blend liberally (about 1 tsp. per patty). After seasoning, top with layer of Lowcountry Gold.
  5. Flip Burger and place cheese on top instantly. Cook for another 1 minute.
    Pull and place on Bun!
  6. Top with Caramelized Onion and Burger Sauce!
  7. MUNCH!

For Caramelized Onions

  1. Thinly julienne your Onion.
  2. In a pan, turned to medium low, place in 4 tbsp. Butter. Allow to melt and add all Onions. Stir occasionally.
  3. Allow Onions to turn brown and almost paste like. Just before you pull, add Salt and stir.

Notes

  • proper caramelized onion will add about 40 minutes to this recipe. A classic burger won't take very long
  • Play around with different cheeses (cheddar with blue cheese, havarti and smoked gouda, etc)
  • Instead of Burger Blend try using Caffe Tailgate, Steakhouse, or Texas Crutch!
