A little background. I was born and raised in Wisconsin. I’ve lived in a couple of other places throughout the U.S. and World. Some places much, much warmer than here. Every single year, Summer comes. Every Wisconsinite, including myself, has a grin from ear-to-ear. Fall comes and the grin gets even bigger! The food, the football, tailgating, and apple orchards (yea, yea, I know, I am basic…and proud.) Then, unlike most peeps from ‘Sconnie, my grin turns drastically in the opposite direction. Winter is by far, with out a doubt in the world, my least favorite season. This year, Mother Nature decided to skip Fall and wham, Winter is here. My way of shoving it in Winter’s face? Making Caribbean style food! These Jerk Chicken Sliders remind of a much, much warmer Jamaica!

The Not-So Simple

Can something be easy but not simple? What I mean by this is, if you make the Foodie Version, you will be making the Jerk Rub, the Mango/Habanero BBQ Sauce, and the Fried Plantains (Tostones!). So, you’re own rub, your own sauce, and an appetizer, all for one sandwich. Trust me when I say, IT IS TOTALLY WORTH THE EXTRA TIME! By extra time, it will take an extra 10-15 minutes total. With the amount of extra flavor you get from this…you know what, just trust me, take the extra time! I guess I’ll still put up the easier version, too.

The Stack

King’s Hawaiian: The perfect bun for these! With the strong flavors from the Jerk Rub and heat from the Mango/Habanero BBQ Sauce, the soft texture and sweetness help to balance.
Mango/Habanero BBQ Sauce: A perfect sauce to add creaminess and heat! (Don’t get scared of the word “Habanero”, it is supppper well balanced.)
Red Onion: A nice texture change and great flavor addition.
Ground Chicken Patty: A nice vehicle to get the Jerk Rub to your face hole. The texture of the patty instead of Pulled Chicken (If you want Pulled Chicken, CLICK the red!) was great for this slider.
Mango/Habanero BBQ Sauce: Yea, put more sauce on it!
Tostone: A perfect sweet, crispy addition! If you’ve never had a Tostone, make them now!
