This post is more about how to properly make this bad boy and make your own Au Jus! I don’t think you’re ready for this French Onion Soup Sandwich…cuz, I know I wasn’t!
The Stack
Brat Bun: You want a soft, absorbent bun to take in all of the juices! Not too big, not too small.
Garlic Aioli: The creamy texture with the punch of Garlic make this a perfect sandwich spread, especially for a smoked sandwich!
Caramelized Onions: The subtle sweetness and the added buttery flavor pack this with even more flavor.
Smoked Shredded Beef: The perfect mix of Salt and Smoke that won’t take over the sandwich but will a crazy amount of flavor.
Gruyere Cheese (shredded): The only cheese you need for a classic French Onion Soup, as well as, the Sandwich version.
Au Jus: This herbaceous, beefy sauce is most glorious for dipping!

Scotch Ale Au Jus




What makes this Au Jus special? Usually, you make it with the drippings of the meat you’re cooking (and that would have made this even better) buuuut, sometimes you’re not actually making the meat and you need some of that Au Jus! And then, I got to thinking, why have I never seen a Jus sauce with beer in it? Beef and darker Beer go hand-in-hand. So, I figured I’d do it for ya! This truly took the sandwiches (French Onion Soup and Italian Beef) to a new level! The herbaceousness with the salt from the Stock and Malt from the Beer are incredible. Add some Red Pepper Flake…holy shit. This stuff was GOOOOOD.
