Buffalo Chicken Meatballs
Perfectly smoky morsels of goodness with just enough heat to keep you happy but not too much to make your mouth mad. Combined with a Tailgate Foodie signature sauce, MMMMM. There is a lot of room for change with spice blends etc.

Ingredients
For Meatballs:
- 1 lb. Ground Chicken
- 1/2 c. Red Onion (minced)
- 2 Garlic Cloves (minced)
- 1 Egg (whole)
- 1/4 c. Buffalo Sauce
- 1/4 c. Bread Crumbs
- 1/2 tsp. Salt
- 1/2 tsp. Black Pepper
- 1/2 tsp. Paprika
- 1/2 tsp. Garlic Powder
- 1/2 tsp. Onion Powder
- 1/2 tsp. Dried Oregano
For Sauce:
- 1/2 c. Ketchup
- 1/4 c. Brown Sugar
- 1/4 c. Spicy Honey
- 2 tbsp. Chipotle Sauce
- 2 tsp. Apple Cider Vinegar
- 2 tsp. Worcestershire Sauce
- 1 tsp. Garlic Powder
Instructions
For Oven:
- Place meat and seasoning blend into mixing bowl. Mix until evenly incorporated.
- Place all other ingredients into bowl. Mix until evenly incorporated.
- Preheat oven to 350F.
- Roll 2 oz. of mixture into ball. (Should make about 12) and place on baking sheet.
- Bake for 20 min. or meatballs are 165F.
- Pull and sear in heavy bottom pan.
- Serve hot with side of sauce!
For smoker:
- Place meat and seasoning blend into mixing bowl. Mix until evenly incorporated.
- Place all other ingredients into bowl. Mix until evenly incorporated.
- Preheat smoker to 225F.
- Roll 2 oz. of mixture into ball. (Should make about 12) and place on baking sheet.
- Smoke for 30 min.
- Pull and sear in heavy bottom pan until meatballs are 165F.
- Serve hot with side of sauce!
For Sauce:
- Place all ingredients into mixing bowl. Mix until evenly incorporated.
Notes
Use different buffalo sauces (both brand and spice levels) to your liking!
