Spicy Duck Poppers

The How To:

Ingredients

  • 3 Duck Breasts (plucked, whole)
  • 6 tbsp. Dirty Bird (divided)
  • 8 oz. Cream Cheese
  • 16 Jalapenos (cut in half, deseeded)
  • 2 lb. Bacon

Instructions

  1. Preheat oven/smoker to 400F.
  2. While preheating, prep Duck and Jalapenos. Cut Duck into a total of 32 strips.
  3. Cut Jalapenos in half, length ways, and deseed.
  4. Coat Duck with Dirt Bird (make sure to have some seasoning left)
  5. Fill Jalapeno with Cream Cheese then top Cream Cheese with Duck Breast.
  6. Wrap Popper with 1 Strip of Bacon per Poppper. Use toothpick to secure if needed.
  7. Place Poppers onto baking sheet. Sprinkle reserved Dirty Bird onto Bacon.
  8. Place into oven. Cook for 35-40 minutes. Once cooked, turn oven to high broil.
  9. Broil for 2-3 extra minutes for added crispiness.
  10. Pull. Cool. Munch!

Notes

  • Thinner Bacon is easier to work with for this.
  • Try different Cream Cheese Flavors like Chive or even a fruit one with Cherries
  • Make an Aioli with Mayo, Horseradish, Dijon Mustard, and Dirty Bird.
